Chocolate Chip Date and Nut Bites

Chocolate Chip Date and Nut Bites contain only 4 ingredients, making them a quick, easy, and yummy snack or treat!

A good friend of ours is just about ready to pop with her second child. She informed me that, apparently, eating 6 dates a day during the end of your pregnancy will lead to an smoother and faster labor. I am all for natural remedies and who am I to argue with a pregnant lady!?

All joking aside, a quick Google search informed me that there have been multiple studies that back up this claim, and that Dates actually have a lot of health benefits (full of fiber, Potassium, Magnesium, vitamin K, and more), pregnant or not!

She has been having a hard time making herself eat the dates by themselves, so I took it upon myself to make her Date consumption seem like a treat.

I had bookmarked a recipe from Peanut Butter Fingers a while back, so I was happy to finally have a reason to give them a try.

First things first, you’ll need to pull out your food processor.

If you’re in the market for one, this is the one I have. Prior to receiving it as a wedding gift, I was using my mom’s, which I’m pretty sure she got as a wedding gift in the 80’s. Anything new/nice I have in my kitchen is a result of getting married…I highly recommend it.

Recipe

Start with 1 (heaping) cup of pitted dates.

Next, add 1/3 Cup of Walnuts (could definitely sub pecans).

Up next is 1/2 cup of Almond Butter.

Give the 3 ingredients a whirl on high for about 30-45 seconds. I had to stop and scrape down the sides, and break up the ball that had formed a couple of times.

Lastly, add about 1/4 cup of mini chocolate chips. I like using these, because they are free of allergens and taste great.

Roll batter into balls and store in an airtight container in your fridge or freezer for as long as they last in your house (2-3 days if you’re lucky.)

These babies seem indulgent, but are healthy enough to bite into as an afternoon snack.
