Enchilada Stuffed Sweet Potatoes

Who likes standing over the stove on a hot summer night? Not I!  We don’t have AC in our house, which is only a problem for about 2-3 months of the year, but man it’s a doozy for those few months! In order to avoid heating up the house even more, we do a lot more BBQing and the Crockpot certainly earns its keep!

Macey says “There’s no way we’re turning on the oven tonight.”

My new favorite kitchen appliance to help avoid the stove/oven is my beloved Instant Pot. Travis got it for me for my birthday and at first, I was terrified to use it (my mom has pressure cooker horror stories from the olden days) but it really couldn’t be easier!

He went with this version  (The Big Kahuna) and I am loving finding new ways to use it.

Last night, I made a super easy and delicious dinner- Enchilada Stuffed Sweet Potatoes.

I started with the 2 large sweet potatoes:

  1. Add 1 Cup of water to pot
  2. Place trivet in bottom (it comes with the pot) then place the ‘taters on top
  3. Cook on manual setting for about 16-18 minutes (for a medium to large potato)

Once the pressure is released from the potatoes, we can start with the chicken.

  1. Add 4 breasts to the Pot with 1 jar of your favorite salsa, as well as some salt, pepper, cumin, and paprika
  2. Turn that baby on simply by locking the lid and hitting the “Poultry” setting.

(Side Note: If you don’t have a pressure cooker, no worries! Before I got mine, I would just place the chicken in the regular ol’ CrockPot before heading off to work and then I would have ready-to-shred chicken when I returned home!)

Meanwhile, I shredded some cheese, picked some cilantro from the garden, and grabbed some sliced olives (for me only…Travis despises black olives) from the pantry.

The VIP of the meal is  my favorite enchilada sauce, drizzled on top! I love this sauce not only for the taste, but also because of the relatively clean list of ingredients. I buy the 6 pack on amazon because it always comes in handy when I am looking for dinner inspiration!

30 minutes later, dinner is ready!
