These Gooey Pumpkin Bars are the perfect Fall sweet treat, and super easy to make!

Ingredients
  • 3/4 cup pumpkin
  • 1/2 cup grass-fed butter or coconut oil, melted
  • 1 egg
  • 1 cup almond flour
  • 1/4 cup arrowroot powder
  • 3/4 cup coconut sugar
  • 1 tsp vanilla
  • 1 Tbsp pumpkin pie spice
  • 1/2 cup chocolate chips
Instructions
  1. Preheat oven to 350ยบ
  2. Mix all ingredients together in a large bowl until well combined. (Make sure butter/oil is fully melted)

  3. Pour mixture into an 8x8 baking dish.
  4. Bake for 30 minutes, or until a toothpick comes out of the center clean. If you don't want them SUPER gooey, go for 40 minutes.
  5. Let cool for 10 minutes, then slice into squares and serve! Can also be stored for a couple of days...but I doubt they will last that long!
