School cafeteria lunch, move aside! This Paleo, Whole30 version of Sloppy Joes might bring you back to the 2nd grade, but the health factor is high, it couldn't be easier t throw together, and the taste is spot on!
Saute/brown the beef and garlic in a pan. Add salt & pepper.
When the meat is close to being finished, bake 4 sweet potatoes in the oven at 400 for about 20-30 minutes (depending on their size). When you are ready to eat, slice the potatoes in 1/2 lengthwise, and spoon the Sloppy Joe mixture into each one.
