School cafeteria lunch, move aside! This Paleo, Whole30 version of Sloppy Joes might bring you back to the 2nd grade,  but the health factor is high, it couldn't be easier t throw together, and the taste is spot on!

Ingredients
  • 1 Lb ground beef
  • 2 cloves garlic
  • 8 oz tomato sauce
  • 1/2 cup ketchup
  • 1 carrot shredded
  • 1 zucchini shredded
  • 1 bell pepper diced
  • 1 onion diced
  • 1 Tbsp coconut sugar optional
  • 1 Tbsp coconut aminos
  • 1 tsp mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • 4 sweet potatoes
Instructions
  1. Saute/brown the beef and garlic in a pan. Add salt & pepper.

  2. Meanwhile, shred/chop vegetables.
  3. Add all ingredients to a crock pot and mix well. Cook on low for 8 hours until the perfect Sloppy Joe consistency and flavor is achieved!
  4. When the meat is close to being finished, bake 4 sweet potatoes in the oven at 400 for about 20-30 minutes (depending on their size). When you are ready to eat, slice the potatoes in 1/2 lengthwise, and spoon the Sloppy Joe mixture into each one.
