When I was in Austin a few weeks ago, I made it my mission to visit my favorite restaurant in town, Hula Hut. Not only is their chip dip game strong, they have a killer sizzling Hawaiian Fajita plate. After eating my weight in chips and dip (as per usual), by the time the fajitas came to the table, I was honestly not even hungry anymore. But I was at HULA HUT and I couldn’t not embrace the full experience. I regret nothing!
A lot of my recipe inspiration comes from eating out at restaurants. I love the idea of going out to dinner-not cooking, not cleaning, fun atmosphere, people watching, unique food options…but I have to say I usually can’t help but think how I could remake the meal at home using high quality ingredients to healthify the plate. Sometimes it’s even better at home, sometimes I think I should stick to letting the professionals make me dinner!
With so much hype to live up to, I was pleasantly surprised with how my version of the Hawaiian Fajitas came out at home. They were quick and simple, and the combination of flavors was super satisfying.
Ingredients:
(For the Marinade)
- 2 Lbs thin cut of steak (like flank)
- ½ – 1 cup Coconut Aminos (Soy Sauce substitute)
- 2 Tbsp Pineapple juice (I just poured in the excess juice from the cubed pineapple)
- 1 tsp Cumin
- 1 tsp Paprika
- ¼ tsp Cayenne
- 1 tsp Garlic Powder
- 1 tsp Salt
- 1 tsp Pepper
(For the Fajitas)
- 3 Tbsp Avocado Oil
- 3 Bell Peppers, sliced
- 1 Yellow Onion, sliced
- 3-4 Green Onions, chopped
- 10 oz Pineapple (I bought it pre-cubed because…why not take the shortcut?)
- 1 tsp Paprika
- 1 tsp Cumin
- 1 tsp Garlic
- S & P to taste
Instructions:
- Marinate the steak for at least 30 minutes in a shallow container (Feel free to plan ahead better than I did and marinate longer, perhaps all day while you are at work)
- While the steak is marinating, slice 3 bell peppers (I like using all different colors!) and onion.
- Heat the grill to medium. Once grate is hot, grill steak for about 6 minutes/side, making sure nothing catches on fire (it happens, a lot).
- Meanwhile, add oil and heat a cast-iron skillet to medium. Once hot, add onions, peppers, and seasonings. Stir well. Allow peppers and onion to cook down/soften, stirring occasionally.
- Once the steak is cooked to your desired level, remove from grill and let sit for about 5-10 minutes. Slice into thin strips, and add to skillet, along with the pineapple. Give it all one more stir to allow everything to combine evenly.
- Serve on its own, with tortillas, rice, beans, whatever strikes you fancy! (Travis used tortillas, I served mine with some avocado slices and salsa.)
Note: Would be equally delicious with grilled chicken!
