Pumpkin Spice Grain-Free Granola

Is anyone getting tired of the “pumpkin everything” life yet? I’m not! I am happily reveling in all things Fall.

This Pumpkin Spice Grain Free Granola is perfectly sweet, crunchy, chewy, and Fall flavored. I have made countless batches of this stuff over the last couple of years and every time I am reminded of just how easy it is to throw together! I took a hiatus making any since last Christmas, but I don’t think a week went by without my mom asking “When are you going to make another batch of that granola?” Well with Fall here, and my mom constantly helping me get through life, I decided the time was NOW!

Made with a combination of nuts, seeds, and honey, this “granola”  is not only gluten-free, but also grain free, dairy-free, and naturally sweetened, too.  Fall-flavored granola for all!

Ingredients:

Dry Ingredients:

  • 3 cups sliced almonds
  • 1 1/2 cups shredded coconut
  • 1 1/2 cups almond meal
  • 3/4 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup chopped pecans
  • 1 tsp pumpkin pie spice
  • 2-3 tsp cinnamon

Wet Ingredients:

  • 3/4 cup coconut oil
  • 1/2 cup honey
  • 3 Tbsp vanilla
Instructions:
  1. Preheat the oven to 325.
  2. In a large bowl, mix all the dry ingredients together.
  3. In a smaller bowl, mix together coconut oil, honey, and vanilla. If the oil or honey is solid, you may need to heat them up in the microwave for 30 seconds until they are in a liquid state.
  4. Pour the wet ingredients into the larger bowl, and mix well to combine.
  5. Prepare a baking sheet with parchment paper for easy cleanup. Spread the granola mixture in a thin layer evenly over the baking sheet.
  6. Bake for 15 minutes, then remove from oven to flip/mix ingredients. Return to the oven to bake for another 15 minutes.
  7. Remove from oven and allow to cool completely. By doing this, your granola will be extra crispy and chewy!
  8. Break into small pieces and store in an airtight container (or 3…it makes a lot!)

This granola will take your yogurt to the next level. It is perfect as a snack by itself, and I have heard stories about entire mason jars of it being eaten in one sitting! In fact, packaged in a mason jar with a little bow, it makes a GREAT gift.  There is nothing better than gifting something homemade AND healthy to friends, teachers, bosses, etc.

It couldn’t be easier to make, is the perfect Fall snack, and is healthy to boot!
