Crock Pot Italian Sausages and Peppers

CrockPot season is here in full force! I actually use my CrockPot pretty consistently all year long, but now that is has cooled off, and it is pitch black by the time I get home from work (making it feel like dinner should have been served hours ago), that puppy basically has a permanent spot on our counter!

This CrockPot (or Instant Pot) Italian Sausages and Peppers is another one of those reoccurring meals in our house. Gluten-free and Paleo-friendly winner of a recipe from Iowa Girl Eats,  I now have the ingredient list and cooking steps committed to memory, mostly because it is so easy!  Every time I make it, no matter how big of a batch I make, it never seems to be enough. It gets better the longer it sits, so making enough for leftovers is a must!

The sweet sausages first get browned, then layered in a crock pot with seared onions, peppers, garlic, and jarred tomatoes. Cook everything low and slow all day long – until the sausages are nearly fall apart tender, and the sauce is perfectly smooth and flavorful. If you are looking for a dish that will hit the ball out of the park flavor-wise, this is it! Perfect for a Sunday game day, when having guests over, or an easy yet decadent weeknight dinner, it’s no wonder this meal is a frequent occurrence in our house!

Ingredients:
  • 2 Tbsp cooking oil (avocado or olive)
  • 2 lbs Sweet Italian Sausages
  • 4 bell peppers
  • 2 onions
  • 4 cloves garlic
  • 2 18 oz jars tomato sauce and/or diced tomatoes
  • 1/2 cup chicken broth
  •  1/2 tsp red pepper flakes
  • 2 Tbsp Italian seasoning
  • 1 tsp each salt & pepper
Instructions:
  1. Heat 1 Tbsp of oil in your Instant Pot (on saute) or in a pot on the stove on medium heat. Cut the sausages in 1/2 and the first batch to the pot. Brown on all sides, then remove from pan. Add the 2nd tbsp of oil and brown the 2nd batch. 
  2. While meat is browning, slice the peppers, onions, and mince the garlic. 
  3. Once all sausages are browned, set them all aside and add the peppers, onions, and garlic to the pot. Saute until they begin to soften, about 5 minutes. 
  4. Add sausages back to the pot, as well as tomato sauce, broth, red pepper flakes, Italian seasoning, and salt & pepper. Give everything a good stir to combine evenly. 
  5. Set timer to cook for 6 hours! 

These sausages and the sauce come out so incredibly flavorful and delicious! After sitting and simmering all day, the sausages all but melt in your mouth, and you’ll want to slurp up every last bit of that sauce!

We ate our sausages and peppers in a big bowl all by themselves! You could also serve them with noodles, zoodles, or spaghetti squash. Eating the peppers, onions, and sauce between a crusty roll would likely be a “next level” maneuver, if you are into that kind of thing 🙂

However you eat it, I promise you will be blown away by the texture, flavor, and ease of this recipe. I also guarantee you will wish you had made a bigger batch, because leftovers make the world go round!
