Hi friends! Happy Monday!

I have been slacking lately in the meal planning department. I have a general idea of the ingredients I need to buy in order to give myself healthy options, but without a specific plan, I find myself struggling to decide what to make come dinner time!

So, this weekend I decided to get back on track (taking some cues from my tips for meal planning post ) and made a solid plan and list before heading off to the store for my weekly haul. I thought that I would share some of my ideas/inspiration with you, in case you too were in need of some new healthy dinner ideas this week!

I also created a printable PDF to help us all with our weekly meal planning! I scribble up something along these lines each week on a piece of notebook paper, but I thought it would be so handy to have a pre-formatted, organized way to keep me on track! What I really like is that the grocery list is on the same page as the menu, so I can refer to the meal plan to recall why I needed a certain item once I’m at the store. This comes in handy if they end up not having what I needed, so I can check to see what would be an easy swap, or if I’ll need to rethink the whole meal. Once I get home, I hang the plan on the fridge, so we all know what’s happening at dinner time throughout the week!

Monday: 

Pan Seared Garlci and Herb Chicken Breasts

Steamed Green Beans

And the star of the show: Bread Free Sweet Potato Stuffing! Stay tuned…I will be sharing the recipe later this week. I have made this in years past around Thanksgiving and it is SOO good-you won’t miss the bread one bit!

Tuesday:

Fish Tacos

If you know me, you know that I just about NEVER miss a chance to eat Mexican Food…so Taco Tuesday is a must around here! This week, I am planning to make fish tacos using Wild Caught Sol from Trader Joe’s. It is super reasonably priced ($6.99/lb) and nice and buttery and flaky-perfect for quick and easy tacos! I will marinate the filets in lime juice, paprika, garlic powder, cumin, salt, and pepper and then either grill them (if Travis is home at a decent hour!) or saute them on the stove. I will also need to make a new (double) batch of Stupid Easy Paleo Tortillas and top with avocado, salsa, and cabbage!

Wednesday

Cobb Salad (Husband Approved) 

I posted this recipe a few months ago and decided it needed to make an appearance on the menu this week! It is hearty and filling, and I love when we can have an entree salad for dinner and not hear any complaints from the man of the house! This week, I am excited to add Primal Kitchen’s Ranch Dressing to the mix! I love my regular balsamic dressing, but it is always nice to change things up and this dressing is made with avocado oil and all clean ingredients…you can purchase it using this link, and I would highly recommend trying any or all of their other flavors. I have yet to try one I didn’t like!

Thursday

Mississippi Roast (in the CrockPot)

First of all, I just love the name of this meal for some reason. Secondly, it is SOOO dang tasty! Place a Rump Roast in the crockpot and add peperoncinis, broth, coconut aminos, a variety of seasonings to mimic “ranch seasoning,” and a little pat of butter. It sounds a little strange, but I promise it works. Plus I always try to have at least one CrockPot meal each week to make things easier on us!

Sides will include:

Friday:

To be honest, this one is totally up in the air! I bought these Wild Caught frozen Ahi Tuna Steaks from Trader Joe’s on a whim, and now I will have to come up with a delicious way to use them! I think I might make a Seared Tuna “Bowl” with rice, avocado, marinated cucumbers, and green onions. I’ll likely use this recipe from my favorite, Iowa Girl Eats, for inspiration.  I’ll keep you posted on how it goes 😉

Saturday & Sunday

I usually leave these weekend nights open so we aren’t locked into any certain plan. Sometimes we will get takeout, or go out to eat with friends. Other times, I like to use up leftovers (usually in the form of nachos 😉 )

All I can say is I think it’s going to be a good week! I love when I have a plan-it makes our busy weeknights so much less hectic. These recipes are all fairly simple, can be made quickly, and will satisfy any hungry belly!
