(Gluten Free) S’mores Brownie Bars

Happy Monday, friends!

We had a lovely weekend around here. Although I am realllly jonesing for some cold winter temperatures (aka soup and stew weather!), I have decided that I will embrace the ridiculously warm temps we are getting here in Southern California. We took the dogs out for a really beautiful walk/hike that was new to us. It’s about 2 miles from our house, yet we have never taken advantage of this particular trail. I am so glad we finally did, because we all had such a fun time.  Jack found his new favorite pastime (who would have guessed a 140lb dog would be a natural born swimmer?) and the rest of us got some sunshine and exercise on a perfect Sunday afternoon.

After our mission to tire out the dogs was accomplished, I got to work in the kitchen throwing together a quick and easy dessert to bring to the Super Bowl Party we attended later in the day. I have been thinking up a version of this dessert for a while now, but I was waiting to have an excuse to make a decadent dessert (and to have people help eat it!) Super Bowl Sunday was definitely the perfect reason!

It turned out better than I imagined, and I liked it for so many reasons. It is a “semi-homemade” style of dessert that requires very little hands-on time. It is totally adaptable depending on your preferences/dietary restrictions. I was able to make it totally gluten-free and bring it to a party where no one knew the difference!

And of course the taste…omg they were SO delicious! The graham cracker crust and broiled marshmallows on top just make it a next level brownie dessert! You just can’t go wrong with s’more ingredients!  I am a huge fan of s’mores, but honestly, these bars were even better than the real deal. There is absolutely a time and place for sitting around a campfire roasting up the gooey mallows, but with this dessert, you can indulge any time of the year!

Ingredients:

Crust:
  • 7.5 Oz Graham Cracker crumbs (about 1.5 cups of crumbs) I used this box for Gluten Free:

    (They are SO good! I got mine at our local grocery store but you can also order them on Amazon!)

  • 1/3 cup coconut sugar
  • 1/3 cup butter, melted
Brownies:
  • 1 (10 oz) box of brownie mix (I used this brand for not only gluten-free, but also Paleo! LOVE Simple Mills!) 
  • To make the brownies, I also needed 3 eggs, 1 Tbsp vanilla, 6 Tbsp butter, and 3/4 cup sugar. It will vary depending on what brand you go with 🙂 
  • 1 cup chocolate chips ( I love Enjoy Life Brand)
  • 1 (16 oz) bag of marshmallows (can be mini or regular)

Instructions:

  1. Preheat the oven to 350º. Line a 9×9 baking dish with foil (for easy removal) and set aside. 
  2. Using a food processor, pulse the graham crackers into crumbs. I pulsed mine about 10-12 times. 
  3. Meanwhile, melt the butter. Add the crumbs, butter, and sugar to a bowl and mix well. 
  4. Press the crumb mixture into the bottom of the 9×9 dish. You can use your fingers to press firmly, or the bottom of a glass. Bake the crust at 350º for 15 minutes. 
  5. While the crust is baking, prepare the brownies. Add all ingredients to a large bowl (following the instructions on your box of brownies). Add the 1 cup of chocolate chips as well. 
  6. Once the crust is baked and the brownies are prepared, add the brownie mixture to the crust and spread evenly. Bake the brownies for 30-35 minutes, or until a toothpick comes out of the center clean. 
  7. Once the brownies are cooked add the marshmallows to the top and press down on them gently (so they “stick” to the brownie layer). 
  8. Turn the oven to broil (500º) and put the pan back in to toast the marshmallows. WATCH VERY CLOSELY as it will go from white to burned in a flash! 
  9. Allow to cool, then remove from the pan and cut into bars. Get yours quick because they won’t last long!  

These bars are the perfect dessert to bring to any gathering. You really can’t go wrong when s’mores are involved! The crust is perfectly sweet and buttery, the chocolate brownie layer is smooth and decadent, and the toasted marshmallows on top just takes it to the next level!

We loved everything about this dessert from how easy it was to prepare as well as how easy it was to make gluten-free (or even “paleo-ish”) to how bomb they tasted! A crowd pleaser for sure.

(This was taken about 30 seconds after cutting into the bars at the party, half the pan already demolished 😉 )
