Well hello hello! It has been a whole week since my last post, and let me tell you, that was not the plan!
Last week started out on a high note with Paleo Cookies in a Jar, but things only went downhill from there. I fully intended to share a second recipe with you all on Thursday. It involved a pork tenderloin with apples and onions and let’s just say it sounded a lot better in my head than it actually tasted. It wasn’t awful, and we still ate it for dinner, but it just wasn’t blog worthy. Only the best for you guys!
So I had an idea for a non-food related article to post instead, but before I could get it finalized, all heck broke loose in our peaceful little town. A fire ignited around 11am about 5 miles from where I work, and we immediately saw the smoke in the sky. We tried to stay positive, hoping that it would be extinguished quickly, but it continued to grow, spreading closer and closer to my place of work…which happens to be a horse ranch that is home to 25 amazing therapy horses.
Long story short, by the time the fire was about a mile down the road, we were loading up trailers to get our horses (and humans) out of harm’s way. They have been evacuated at a beautiful ranch since Thursday night, and although they are safe and healthy (and probably enjoying their little vacay), we can’t wait to get them “home” and resume life as normal. It sure has been a whirlwind, but we feel very fortunate that everything worked out the way that it did.
Annnnnyway, after all the craziness last week, I really wanted to start this week off on the right foot. And for me, that means an organized and healthy meal plan. My plan is to try some new recipes, recreate some recent winners to share with you all, and also stick with some “tried and trues” to keep things simple and easy this week. Artichoke and Mushroom Stuffed Chicken Breasts
I made this last week on a whim and holy smokes it was good! I am making it again this week. partly so I can photograph it and write down the exact measurements, but also just because I wanted to eat it again! I loooove marinated artichokes and this recipe is one of those that seems fancy and sophisticated, but is really super easy and only takes a few steps! Stay tuned for the full recipe 🙂
Tuesday
Ground Beef Tacos
File this one under the “tried and true”/ lazy dinner category. We just love tacos so much around here, I have ground beef I need to use up, and this El Nopalito salsa is reason enough to eat tacos all on its own! (If you live in the greater San Diego area, this is a local company and you should hunt some down! We ate an entire pint of it the first night we tried it 😉 I always like to “sneak in” some veggies when I make anything with ground meat, hence the carrot and zucchini. I will serve the ground beef taco meat with homemade guacamole, onions, tomatoes, Stupid Easy Paleo Tortillas, and of course SALSA!
Wednesday
Paleo Sloppy Joe’s
While the mess won’t be seeping out the sides of a hamburger bun, these Sloppy Joe Stuffed Sweet Potatoes will be equally delicious! This is another recipe I plan to share here on the blog this week, and if my taste test today was any indication, dinner on Wednesday is going to be a good one!
Thursday
Chicken Sausage Primavera
I’ve said it before, and I’ll say it again…this is one of my favorite super easy, super delicious weeknight meals. I decided it needed to be on the menu this week when I found these organic chicken sausages at Trader Joe’s for the first time. I got embarrassingly excited to spot them, and can’t wait to give them a try! I will saute all the veggies first, set them aside, then brown the sliced sausages. Meanwhile, I’ll cook the brown rice pasta, and be sure to reserve a little pasta water to help mix it all together. Always a winner in this house!
Friday
Korean Steak with Cauliflower Rice & Broccoli
Last week, I made Pinch of Yum’s Instant Pot Korean Beef Tacos. The recipe called for a large vat of this Korean Beef Marinade, so I saved some to reuse it in a slightly different way. I plan to marinate the beef all day and then grill the steaks. I will serve it with cauliflower rice (probably white rice for the hubby) and steamed broccoli. Nice and easy, but super tasty for a Friday night meal!
Saturday night, we have out big Staff Holiday party, so I am off the hook for dinner. We’ll play Sunday by ear 🙂
