Paleo Cookies in a Jar

Hello and Happy Monday!

Did everyone have a spectacular first weekend of December?

On Saturday, we attended our little town’s Christmas Parade, and on Sunday we picked up our tree and got it all lit and decorated (with the few ornaments we have accumulated so far…) Although temperatures are supposed to reach the 80’s this week (WTH!?) I am embracing the heck out of this Christmas Spirit!

We finished up our little mini Whole30 reset (or Whole7) on Saturday, and now that that is out of the way, I am ready to dive headfirst into all things Christmas! I really did love eating so clean for a week, and I could honestly sustain that lifestyle pretty consistently…except for one thing: Chocolate. I just don’t want any part of a world where there is no chocolate, and frankly, life is just too short to abstain from it! So Sunday was the perfect opportunity to try out a new super simple cookie recipe, lots of chocolate included!

I have had this idea for Paleo Cookies in a Jar for a while now. I love the idea of giving away jars of “cookie mix” as a gift around the holidays. It is thoughtful, creative, cute, and the recipient can enjoy the treats whenever they please.

This recipe is gluten free, grain free, dairy free, made with wholesome ingredients, and the cookies taste amazing! You can gift them to the health enthusiast in your life, but also to your neighbor, boss, child’s teacher, etc. and I bet they will be grateful for the healthy, simple, and delicious recipe.

I plan on making quite a few more of these bad boys, not only to gift to my family, friends, and coworkers, but also to have on hand in my pantry for when the cookie craving hits, when we have company stop by, or when we remember we better leave something nutritious and delicious out for Santa himself!

I’ll come out and say it…I am a pretty bad gift-giver. It’s not that I don’t love the people in my life, I just don’t spend the time I should thinking about how I can SHOW them I care 🙂 This gift idea couldn’t be easier to put together AND I will feel good about giving it out because I know it is made with all healthy ingredients (and food really is my love language). Plus, who doesn’t want easy to make, delicious cookies at their disposal!? Bonus thought I just had…you could also make a couple batches to give out as “taste tests” along with the jar of mix. That way, they will know what a treat they are in for!

Ok, here are the simple steps on how to make Paleo Cookies in a Jar!

Ingredients:

For each Jar:
  • 1 Mason Jar (I used 1 quart, and there’s enough room to double the recipe)
  • 1 3/4 cup almond flour
  • 1/2 cup coconut sugar
  • 3/4 cup chocolate chips (I like Enjoy Life for allergen-free)
  • 1/4 tsp salt
  • 1/4 tsp baking soda
Add Before Baking:
  • 1 egg
  • 1/4 cup coconut oil (or butter)
  • 1 tsp vanilla

Instructions:

  1. Start with a clean, dry jar. Pour in almond flour first. Then add coconut sugar. Add salt and baking soda. Top with chocolate chips. 
  2. If baking cookies, add all dry ingredients, plus 1 egg, 1 tsp vanilla, and 1/4 cup coconut oil (melted) to a large bowl and mix well. Line a baking sheet with parchment paper and make the dough into balls. Flatten slightly with your fingers. Bake in a 350º oven for 8-10 minutes. 
  3. If gifting the jar, add a Christmas bow, and attach directions and a nice note! 🙂

This batch of cookies ended up being some of my favorite Paleo Cookies I’ve tried to date! That is especially good news since they are SO easy to make and require only a short list of ingredients!

I know that whoever is gifted a jar of this cookie mix will be thankful for the high nutrition factor, the ease of baking them, and will be blown away by the amazing taste!

Twinkling Christmas tree, fire in the fireplace, and freshly baked chocolate chip cookies…it really doesn’t get better than that!
