Paleo Sloppy Joes

Anytime I even think about Sloppy Joes, the ridiculous scene from Billy Madison pops in my head and I can’t help but laugh.  The lunch lady in the scene does not make them seem very appetizing, as she heaps the sandwiches onto the plate with the classic lunch lady line, “I made them extra sloppy for ya!”

I will say, Sloppy Joes were actually something I looked forward to when I occasionally ate from the cafeteria at school. There is just something very classically “elementary school” about them. But you know what? There is a super easy way to spruce up the old classic to make it a healthy, delicious, and comforting meal!

It’s as easy as mixing up a bunch of ingredients in a crock pot, roasting some sweet potatoes, and calling it dinner on a wintery weeknight!

The meat mixture ends up being loaded with veggies, is Whole30 compliant, and the taste…it’s spot on! (Much more appetizing than anything a lunch lady has ever served me!) The combination of the meat with the sweet potatoes is perfect, but you could also serve with cauliflower rice to keep it low carb.

I am always on the lookout for crock pot, instant pot, or just quick and easy meals, but especially in the winter when it’s dark long before I’ve even made it home from work. This meal is comforting, filling, and tasty enough for the whole family to enjoy. Time to fire up that crock pot!

Ingredients:

  • 1 Lb ground beef
  • 2 cloves garlic
  • 8 oz tomato sauce
  • 1/2 cup ketchup (I used this whole30 version, leftover from making meatloaf last week)
  • 1 carrot, shredded
  • 1 zucchini, shredded
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 Tbsp coconut aminos
  • 1 tsp mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • 4 sweet potatoes

Instructions:

  1. Saute/brown the beef and garlic in a pan. Add in salt & pepper. 
  2. Meanwhile, shred/chop vegetables.
  3. Add all ingredients to a crock pot and mix well.  Cook on low for 8 hours until the perfect Sloppy Joe consistency and flavor is achieved!
  4. When the meat is close to being finished, bake 4 sweet potatoes in the oven at 400 for about 20-30 minutes (depending on their size).  When you are ready to eat, slice the potatoes in 1/2 lengthwise, and spoon the Sloppy Joe meat into each one.

Serve with something green, like roasted Brussels Sprouts, broccoli, or a salad and revel in the wonder that is healthified, paleo, whole30 Sloppy Joe’s! Lunch ladies, take note 🙂

School cafeteria lunch, move aside! This Paleo, Whole30 version of Sloppy Joes might bring you back to the 2nd grade,  but the health factor is high, it couldn't be easier t throw together, and the taste is spot on!
