Baking is one of my favorite things to do when I have some spare time. There is nothing like putting on some tunes and getting lost in creating something delicious!
I’ve done a lot of baking with Almond Flour, Coconut Flour, Arrowroot Powder, etc. I love creating Paleo recipes that I know have wholesome ingredients in them. However, I started seeing this flour alternative popping up around the web and I had to give it a try!
We had people over for a BBQ last weekend so I had the perfect excuse to put on my apron and start baking!
- 2 1/4 Cup Bob's 1:1 GF Flour Mix
- 1 tsp Baking Soda
- 1 tsp Salt
- 3/4 Cup Brown Sugar (I subbed Coconut Sugar)
- 3/4 Cup Granulated Sugar
- 1 Cup Butter
- 1 tsp Vanilla
- 2 Eggs
- 1 Cup Chocolate Chips

In a medium size bowl, mix flour, baking soda, and salt.

In a large bowl or mixer, cream together both sugars, butter, and vanilla. (Side note: Is there any better smell than creamed sugar, butter, and vanilla?)

Add eggs, 1 at a time

Gradually add dry ingredients to the mixer and beat until smooth.

Pause to take a picture of your dog because she's just SO cute!

Stir in chocolate chips

Roll dough into balls (or plop them on the lined baking sheet like I do) about 1 heaping Tbsp each. Place 2 inches apart on the sheet.

Bake at 375 Degrees for 11-13 mins.
These came out perfectly soft and chewy. We ended up eating them with homemade vanilla ice cream, and it was the perfect end to a warm summer BBQ!
