(Gluten Free) S’mores Brownie Bars

Posted In: Recipes | Sweets/Desserts
Happy Monday, friends! We had a lovely weekend around here. Although I am realllly jonesing for some cold winter temperatures (aka soup and stew weather!), I have decided that I will embrace the ridiculously warm temps we are getting here in Southern California. We took the dogs out for a really beautiful walk/hike that was new to us. It's about 2 miles from our house, yet we have never taken advantage of this particular trail. I am so glad we finally did, because we all had such a fun time.  Jack found his new favorite[...]

Pork Chorizo Poppers (Paleo & Whole30)

Who's excited for the Super Bowl this weekend!? I genuinely consider Super Bowl Sunday to be a legitimate holiday at our house. Regardless of who is playing, I get giddy with excitement the days leading up to the big event. When Travis and I were living that long-distance relationship life, being able to spend that "holiday" together was something I looked forward to most. There's a lot to love about Super Bowl Sunday. First, I enjoy getting the chance to learn more about the teams and their players. There are always such[...]

Cauliflower Mac & Cheese (Paleo & Low Carb Versions)

Posted In: Recipes | Side Dishes
We've got 2 recipes for the price of one in today's post! Here's what happened- I was experimenting in the kitchen last weekend and made 2 versions of the same basic dish, and then couldn't decide which one I wanted to share here today. They both turned out to be super tasty, and each have their benefits depending on your specific dietary needs or preferences :) This Cauliflower Mac & Cheese is a low carb, highly nutritious version of everyone's favorite side dish. I've done cauliflower mashed "potatoes", and cauli[...]

5 Tips to Help you Stick to a Healthier Diet

I don't think there are many people that think about food quite as much as I do. I realize that the way that I meal plan and food prep is not quite typical, and most "normal" people don't put so much thought and effort into planning, shopping, organizing, and cooking. I truly enjoy doing it, and it's just where my mind goes during idle moments. But it got me thinking, where do some people go wrong, or when do they come across an obstacle that makes healthy eating seem unattainable? I have received a lot of feedback from frie[...]

Happy Friday! I have one more delicious recipe to share before we head into our weekend... I mentioned in my post on Monday that a friend and coworker of mine recently asked me for cooking lessons! I am definitely not a pro, wing it a lot of the time, make plenty of "meh" meals, and cut and burn myself more often than I should admit. But since "going paleo" a little over 5 years ago, I have learned (through trial and error) how to plan, prepare, and cook a lot of different healthy, wholesome foods. While I am no expert,[...]

Crock Pot Chicken Cacciatore

Posted In: Chicken & Turkey | Recipes
Confession time: I had to look up how to pronounce "Cacciatore" after making this meal. I kept making up random words/ sounds to name the dish, and then I decided it was time for me to become a wise, worldly member of society that can pronounce words that I plan to post on my blog! And for those of you wondering, it's like this: Catch-eh-tory. And I'm sure I am still butchering it. But I hope you've learned something new today! Now, as for the spelling, there's no hope for me. That is what spell check is for. So despite[...]

Meal Plan Monday

Posted In: Lifestyle | Recipes
Howdy, friends! How was your weekend? Ours was productive and pretty low key. Travis built this new fence and planters in our front yard, while I did a bunch of cooking and meal prep. (We are going to plant some ivy or a climbing plan of some sort to help give us some privacy from the neighbors :) ) I don't typically spend a lot of time meal prepping on the weekends, but I have a friend from work that asked me to teach her how to cook! I am by no means an expert, but I have been at it for a while and was excited to share[...]

Honey Dijon Chicken Thighs

I think there is a common theme around here in regards to recipes: quick, easy, and healthy! While I do love cooking and eating wholesome and delicious food, I just don't have the time to spend hours in the kitchen! I love meals I can throw in the crockpot (so much!), ones I can prepare ahead of time and then pop in the oven, and ones I can brainlessly whip up in less than 30 minutes. I would imagine that most people out there feel the same way...not many people have a ton of spare time to kill! (And even if I DID have some[...]

How did everyone's first week of 2018 go? After writing last week's post about my 2018 New Year's Resolution, I have felt a sense of calm that I didn't have before.  I think that by deciding to practice "contentment" this year, I have let go of a lot of the things that cause me undue stress. I realized that the things that worry me, overwhelm me, frustrate me, etc. are all things that I cannot control. By making the conscious decision to "change the things I can, and accept the things I cannot," life takes on a whole ne[...]

Thoughts About New Years Resolutions

Posted In: Lifestyle
Hellllooo friends!! It has been a bit since I last posted...I have missed creating new recipes and sharing tidbits about my life! I wouldn't say the break was "much needed" as I love using this space as a creative outlet...I was just filling my time with other things which left little time for cooking and blogging. Things like: taking a trip to Seattle, loving on my baby nephew (aka the sweetest, most adorable thing in.the.world!), reading (something I rarely make time for), lots of dog walks, and spending some extra quality[...]
