Crock Pot Chicken Cacciatore

Confession time: I had to look up how to pronounce “Cacciatore” after making this meal. I kept making up random words/ sounds to name the dish, and then I decided it was time for me to become a wise, worldly member of society that can pronounce words that I plan to post on my blog! And for those of you wondering, it’s like this: Catch-eh-tory. And I’m sure I am still butchering it. But I hope you’ve learned something new today! Now, as for the spelling, there’s no hope for me. That is what spell check is for.

So despite the fact that I can neither pronounce nor spell the name of this dish, the meal itself turned out absolutely fabulous! I might not be able to spell, but I sure can dump a bunch of things in a crock pot and call it dinner 🙂

When I plan my meals for the week, I always try to make sure I have at least one slow cooker recipe. I try to save it for a day when I know I will be extra busy, or just ready for a night off from cooking. I think I must have seen a picture of Chicken Cacciatore in my Instagram feed, but somehow I decided that this week’s slow cooker meal would be of the Italian variety, with chicken, lots of peppers and onion, tomato sauce, and herbs.

I have a similar recipe on the blog here that uses Italian sausages, but I was in the mood to try something different. For the most part, when I use the crockpot, I am looking for a recipe that allows you to just throw everything in and forget about it. I know a lot of recipes call for browning the meat first, and that DEFINITELY can have a huge impact on the flavors, but sometimes there just isn’t enough time in the day (or in the morning when I am trying to get out the door to work!) for that. This sauce ended up being su[er bold and flavorful, as was the meat, even after skipping the browning process!

I used chicken breasts, because that is what I had in the fridge, and then started worrying that they would dry out and be tasteless by the end of the cooking time. That was certainly not the case, as the meat was juicy and tender. You could definitely use thighs if that is more your style, though!

If you are looking for a new slow cooker recipe to add to your weekly menu, you gotta give this one a try! It couldn’t be easier to make, it is completely Paleo and Whole30 compliant, feeds a crowd, and tastes phenomenal! I served mine with zucchini noodles and Travis ate his with brown rice pasta noodles. Spaghetti squash would definitely be a great side as well!

Ingredients:

  • 4 whole chicken breasts (or 8 thighs)
  • 28 oz tomato sauce
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow onion
  • 2 cloves garlic
  • 1 tsp each oregano, basil, thyme
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 3/4 tsp pepper

Instructions:

  1. Slice bell peppers and onion. Mince the garlic. 
  2. First, add the chicken to the crockpot. Then pile in the peppers, onions, and garlic. Pour the tomato sauce over the top. Lastly, sprinkle all of the seasonings over the sauce. 
  3. Give the peppers, onions, tomato sauce, and seasonings a good mix. 
  4. Cook on low for 8 hours in the crockpot. When cooking time is up, chop the chicken breast into 1/3rds and return to the pot to simmer until ready to eat. 
  5. Serve with zucchini noodles, spaghetti squash, or brown rice pasta.
