Our Weekend in Snapshots!

Posted In: Lifestyle

Happy Monday, friends! How about that eclipse, huh? Was it just me, or did all the people telling you not to look directly at the sun make you want to look directly at the sun? The whole thing got a lot of hype, but hey, science is cool and I’m all about anything that gets people excited in a positive way!

Anyway…let’s back up a little to this weekend’s recap! It was our first weekend home in a few weeks, so we made sure to enjoy some quality time with our pups, get some work done around the house, and enjoy some time with friends and family!

I do not excel at remembering to take pictures, but I did my best to get some snapshots along the way to share here today!

On Friday night, we had our little pal, CJ over to make pizzas! His mommy (our good friend) just had a baby girl and I had been wanting to bring dinner over to them all week. I also missed this little dude and wanted to do something special after his exciting week of becoming a big brother! He was such a big helper and felt pretty proud of his creations when we brought them home to mom (and I got to meet baby McKinley…bonus!)

I usually work on Saturdays, but not this weekend! I got to have a leisurely morning (sorta, the dogs still woke me up at 5:30 on the dot) and then headed to the gym hoping that moving around would help ease the extreme soreness I was experiencing…this week’s workouts were a doozy! I wouldn’t say the workout “helped” but it still felt good to get my day started with some exercise!

On my way home, I thought up this lovely breakfast:

I posted it to my Instagram account knowing full well that I was just one of a million jumping on the Avocado Toast wagon! It sure did hit the spot though!

Meanwhile, Travis straight up demolished our hall bathroom! EEK! It has definitely been the “next thing to do on our list” for quite some time now, so it was exciting to see it finally happening!

He was on such a roll, that later Saturday evening, I headed to the Padres v.s. Nationals game solo to meet up with my good friend (who I just visited in DC! It’s been so nice getting to see her as much as I have the last 2 weeks!) It was a great night…nothing like watching baseball on a perfect summer evening!

These Tri-Tip Nachos from Seaside Market (in the stadium) hit.the.spot!

Sunday morning, the dogs were clearly feeling antsy to get out of the house so we took them to a new (to them) park for a morning stroll. Apparently this was a comfortable way for Jack to ride in the car?

I really don’t get the things he does sometimes, but he definitely cracks me up!

I also made these amazing-ly simple, delicious, and easy waffles from Paleo Parents/Real Everything  They have been a go-to of mine for quite a while, and it was time to re-stock the freezer (they re-toast really well!)

After breakfast and walking dogs, I did a pretty solid grocery shopping trip to stock up for the week. I went rogue and headed to Sprout’s, rather than my usual Trader Joe’s. I have to say that I feel a little like I’ve betrayed my true love, but it is nice to switch things up sometimes.

I was pretty famished after my shopping trip, and threw together this go-to lunch that always just hits the spot. (Back at it again with the white peaches…they are so good this summer!)

To round out our Sunday, we had my mom and brother over for dinner. It was Scott’s first week of a new job and I wanted to hear about it! Plus, I needed an excuse to try out a Try-Tip Marinade I plan on sharing here soon. I think it got the stamp of approval from everyone in attendance! Everyone contributed with different sides (on which we may have gone a little overboard!) including my mom’s famous Tomato Pie, a basil corn salad by my brother, and a cauliflower “twice baked potato” casserole from myself! It all just screamed “SUMMER” and it certainly was the perfect Sunday August evening with the fam!

And that was our weekend in a nutshell! As always, it flew by and was over all too soon! I could use another day to finish up my chores and maybe just sit on the couch for a minute or two! There’s always next weekend…

Hope you’ve had a great start to your week!
