Perfect Paleo Banana Bread

We have kids in our house! Human kids, not just the K-9 type. Travis’s niece and nephew are visiting from Tucson for the weekend, along with his parents. We have been looking forward to seeing them, and since feeding people is my love language, I have been brainstorming kid-friendly meal ideas. On the menu is: Taco night, make your own pizza night, as well as dinner out at my father in-law’s favorite burger spot.

I also wanted to make sure we had some healthy options on hand for them to grab on their way out the door to Sea World, Legoland, and the beach! My thoughts immediately went my favorite Banana Bread Recipe, from Civilized Caveman.

A few reasons why I love this recipe:

  1. There are no added sweeteners. Ripe bananas are sweet enough!
  2. It’s made in a blender. That is so up my ally…throw everything in together, no bowls, no mixing. Easy peasy!
  3. It’s a great way to use up brown bananas. As soon as our bananas start to turn brown, they are no longer acceptable for eating as far as Travis is concerned. So I peel and freeze them for when I’m ready to make this recipe or a smoothie.
  4. It tastes amazing! Perfectly “banana-y.”

Healthy, easy, and delicious…what more could you ask for?

Ingredients:

  • 4 Bananas
  • 4 Eggs
  • 1/2 Cup Almond Butter
  • 4 Tbsp Grass-fed butter or Coconut Oil
  • 1/2 Cup  Coconut Flour
  • 1 Tbsp Cinnamon
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Vanilla
  • Pinch of Salt
Instructions:
  1. Preheat oven to 350*
  2. Blend together bananas, eggs, nut butter, and butter/oil in blender or food processor for about 30 seconds.
  3. Add coconut flour, cinnamon, baking soda/powder, vanilla, and salt. Blend for another 30 seconds. (You may need to scrape down the sides with a spatula 1/2 way through.)
  4. Pour batter into a greased loaf pan. (Could also make muffins, just cut down cooking time to ~25-30 minutes.)
  5. Place in oven for 55-60 minutes, or until a toothpick comes out of the center clean.
  6. Allow to cool and slice up! Perhaps serve with a pat of butter or a smear of almond butter.

As soon as the bread starts baking, the smell is mouthwatering! I love having it on hand for grown-ups and kids alike. Nothing like a fulfilling, nutritious snack that feels indulgent!
