Weekly Meal Plan 3/12/18

Happy Monday!

I know everyone is talking about Daylight Savings time like it’s something new, but man it hit us hard this year! And for absolutely no good reason, because I’m pretty sure we got the same amount of sleep we normally do, but we were both feeling mightly sleepy all day yesterday! I guess our bodies just need a minute (or a few days) to adapt to change!

We resisted the urge to just sit around, and got out of the house to run some errands, Travis did a little work around the house, I got some cooking/picture taking done in the kitchen, and we reconvened to take the dogs out for some playtime before dinner. But still, All.day.long. I looked at the clocked and hollered “It’s already ____ o’clock!?” Why can’t time on Sundays slow down juuuust a tad?

Anyway, regardless of my tired state on Sunday, I still managed to put together a killer meal plan for this week. I don’t know if this is helpful for others, but I personally love when bloggers share their weekly menus. We all need a little help in the brainstorming department now and then! Plus, I feel extra compelled to share our menu when I know it’s gonna be a good one, and this week is definitely that!

What I bet would be more helpful, is if I could get this posted over the weekend, like on Sunday morning when people are preparing for the week and about to head to the grocery store. Maybe one day I will get it together to make that happen!

In the meantime, here is this week’s awesome meal plan! Every night looks pretty delicious, but my eyes are already on Saturday-which happens to be St. Patricks’s day. Stay tuned for a bomb recipe later in the week that NEEDS to find its way to your table come Saturday night! 🙂

Monday

Pasta Primavera

I probably make this dish (or something very similar) just about every other week. It is SO easy and I know Travis is always happy to eat it. I usually use Brown Rice Pasta, but I have also been enjoying this lentil pasta sent to me from Modern Table. I actually photographed and wrote down the steps this time so that I can share it on the blog next week…stay tuned!

Tuesday

Pork Chorizo Burgers with Sweet Potato Fries & Peppers & Onions

I am so excited to use the ground pork from my latest Butcher Box delivery! I was brainstorming how I wanted to use it, and it was a pretty easy decision-I just LOVE homemade chorizo, and I was inspired by the sliders I made for Super Bowl Sunday last month (click the link for the recipe to make your own chorizo seasonings). I plan to season the pork ahead of time and then form the burgers and fry them up when I get home from work. I’ll serve them with some sauteed peppers and onions, sweet potato fries, and a big scoop of guacamole on the side.

Wednesday

Garlic, Lemon, Butter Salmon with Zucchini and Rice

It’s been a bit since we’ve had salmon, and it sounded delicious when I was meal planning. I think it’s been in the back of my head since I saw this recipe on facebook a while back…looks soooo yummy and so easy! And it’s happening Wednesday night @ Our Fine Day headquarters! I’ll be serving it with those cute little baby zucchinis and white rice for the hubby, cauliflower rice for me!

Thursday

Bruschetta Chicken with Spaghetti Squash

If I haven’t already, let me introduce you to the worlds easiest dinner! It literally only requires those few ingredients pictured, cooks in under 20 minutes, and it is SO tasty and healthy! I will be making the spaghetti squash in the Instant Pot, which takes all of 7 minutes, and then cooking up some chicken breasts in a skillet, chopping them up, and adding that delicious and flavorful pre-made bruschetta sauce from none other than Trader Joe’s! I was reminded of this easy dinner when I saw Iowa Girl Eats’ latest post…so if you want to go the extra mile, you can make your own bruschetta from her amazing looking recipe! I will definitely give it a go later this summer when we (HOPEFULLY) have a garden full of luscious tomatoes ;).

Friday

Leftover Chili Stuffed Sweet Potatoes & A Side Salad

It was super rainy and cold on Saturday (a rare occurrence in SoCal) so I made chili in the Instant Pot on Saturday night and let me just say: GAME CHANGER! I made a really basic/classic recipe using beans (which are not paleo) but I also have this recipe on the blog that replaces the beans with sweet potatoes and some veggies. I am not sure if I will ever make chili again in anything other than the Instant Pot…it was SO easy and SO flavorful!

Anyway, I made a big batch, so I froze what was leftover so that we can have a super quick and easy dinner later this week. It’s supposed to be cold and rainy again on Friday, so I know I will be so happy with myself when I get home from work to a comforting meal! I will pop the sweet potatoes into the toaster oven while I shower, and then reheat the chili on the stove while I throw together a quick salad. It’s gonna be a good one!

Saturday

Irish Nachos

The grand finale! This week’s menu will wrap up with a household favorite in honor of St. Patrick’s Day. I am totally not even a little bit sure if they actually eat these in Ireland, but the word “Irish” is in the name so I am going with it! I think that what makes them Irish is the use of Russet Potatoes as the base to otherwise pretty standard nacho toppings. It’s no wonder that I love them, especially considering my love of “Carne/Pollo Asada Fries”. Basically the same idea. But I love that I have control over the quality ingredients going into the dish, so an otherwise seemingly unhealthy meal can be totally legit and on track!

I will post the full recipe later this week so that you too can enjoy the deliciousness (perhaps alongside some green beer?) in honor of the Irish holiday 🙂
